The name of this dish is Polishorigin, in translation it means "separated, cut off piece". The fact is that earlier zrazes were prepared not from minced meat, but from whole pieces of meat, from them they made something like chops and wrapped in the resulting strata stuffing.
To prepare zraza meat will need meatminced good quality. You can take minced meat from one kind of meat, for example, pork or lamb. But the dish will get tastier if you cook (or buy) a mixed stuffing made from several kinds of meat. Excellent option: beef, turkey and pork in a one-to-one ratio. However, mincemeat can be cooked according to one's own taste, but it is better that it be fat enough, otherwise the cooked dish will turn dryish. If there is only lean ground meat, then it is necessary to add a butter to the filling of the juicy dish.
The composition of minced meat for the missiles is exactly the same as for thecooking cutlet. That is, in the meat scrolled through the meat grinder (600 grams) it is necessary to add finely chopped (or grated on a grater) bulb, milk bread soaked in milk (2 slices), salt and pepper. Bread can be replaced with semolina, which is soaked for half an hour in milk. The specified amount of minced meat will need half a cup of cereals. Stuffing should be well kneaded and knocked out. The process of knocking out the minced meat is that the whole mass is collected in a ball and thrown into the bowl with force. You need to do this once 10-15. Then the stuffing should be put in the cold, about half an hour.

An interesting variant is meat zrazy with a mushroom filling. Mushrooms can be used any - fresh or frozen mushrooms, dried forest mushrooms or salted mushrooms. Mushrooms need to be boiled (except salted), cut and mixed with fried onions, you can add a boiled egg to the filling.
As the filling is often used boiledcereals - for example rice with butter and boiled egg or buckwheat with mushrooms. And you can prepare zrazy meat with cheese, putting as a filling on a bar of hard cheese or a spoonful of soft fused.
Forming zrazy meat is not difficult.For this, minced meat is divided into portions, as in the preparation of cutlets. Then a bag of minced meat is put on a palm and a cake is made from it. In the middle of the prepared billet lay a little pre-prepared filling, and the palm begins to compress, connecting the edges of the meat cake. We got something like a pie, but instead of the test we used minced meat.
If it is supposed to fry zrazy in a frying pan, thenthey will need to roll in breadcrumbs. But a more useful option for this dish is obtained if you bake zrazy in the oven. By the way, this method of cooking requires less, because you will not need to stand by the frying pan, turn over the cutlets and watch that they are not burned. Zrazy can be baked simply so or fill them with sauce (sour cream, tomato or any of their own taste). And if they are baked several times with the juice or sauce that has been set aside, the taste of the dish will be very gentle.
Zrazy can be cooked and steamed or put out ina small amount of broth or salted water in a frying pan under the lid. In the latter case, the heating should be small, so that the liquid does not boil away, and the zrazes are not burnt.
